Unpasteurized cow's milk cheese from Isle aux Grues.

Smooth cheese, light yellow to straw yellow depending on the season, unctuous, supple, melting, with a taste of butter, hazelnut, and roasted almond. The rind is washed and brushed with a slightly sandy and crispy ochre color.

Story

Édouard Quertier was appointed the first parish priest of Saint-Antoine de l'Île-aux-Grues in 1831. Stocky and imposing, severe and combative, he left his mark on history with his quarrels in the presbytery with Father Painchaud and his relentless fight against alcohol. He was one of the precursors of prohibition. A tough mind under a cassock of kindness. The personality of the cheese resembles him.
