Unpasteurized cow's milk cheese from Isle aux Grues.

Rind washed and brushed with a slightly sandy and crunchy ochre color. Smooth cheese, light yellow to straw yellow depending on the season, unctuous, supple, melting, with a taste of butter, hazelnut, and roasted almond.

Story

Édouard Quertier was appointed the first parish priest of Saint-Antoine de l'Île-aux-Grues in 1831. Stocky and imposing, stern and combative, he left his mark on the history of the rectory quarrels with Father Painchaud and his relentless fight against alcohol. He was one of the precursors of prohibition. A tough mind under a cassock of kindness. The personality of the cheese resembles him.
