Information

Pasteurised cow's milk cheese with a soft-washed rind. Vegetarian cheese.

Ripened for three to four weeks, during which time the cheese is washed in salt water to give it its unique taste and soft texture. Its rind has orange and copper highlights. Its taste is frank and generous, with baked notes and maturing, slightly buttery and sweet.

Produced in the Dordogne at Saint-Antoine-de-Breuilh, France, since 1970.

Pairing
  • Bergerac wine, red, or Monbazillac, sweet white wine. Two wines very close to the cheese factory.
  • A good country bread, with two soft textures that go perfectly together.
