Cheese made from thermalized milk. Semi-firm paste with internal molds is covered with a natural rind dotted with ochre spots that contain beautiful bluish veins, due to the presence of Penicillium Roqueforti.

Dominantly fruity aroma. Cheese made in Sainte-Élizabeth-de-Warwick.
